Olive and Raisin Chicken with Onions and Mushrooms

Ingredients
4 Pieces of chicken with or without bones
Green or black olives (pitted)
Sliced mushrooms
1 Onion
Raisins
Salt
Pepper
Olive Oil
Any type of sweet wine

In a frying pan saute one sliced onion. When it’s browned add the sliced mushrooms. When mushrooms are tender add olives and raisins. Add salt to taste. Set aside in a bowl. In same pan drizzle a little olive oil turn up the flame to high when oil is hot place chicken skin down till browned, than turn over. Add the vegetables. Add some wine about 3/4 cup. Turn heat to low and let cook for 30 minutes or until chicken is cooked.

Baked Tilapia with Mushroom and Sun-dried Tomato Pasta

Ingredients
4 pieces of tilapia
pepper
salt
olive oil
fresh white mushrooms
sun-dried tomatoes in oil
fresh garlic
tomato paste
pasta

1. Put pasta up (any type you want)

2. Drizzle olive oil in a pan. Sprinkle salt and pepper on tilapia. Place fish in the pan 2 minutes on each side, then place covered in the oven 400 for 5 minutes.

3. In a pan drizzle some oil from the sun-dried tomatoes. Mince 2 cloves of garlic. Put in pan, saute the mushrooms, a half cup chopped sun-dried tomatoes and 2 tablespoons of tomato paste.. Salt and pepper to taste. When pasta is cooked, drain and mix it with the cooked mushrooms and sun-dried tomatoes.

Pasta with Tomato Sauce and Breaded Turkey Balls

Ingredients 
Pasta
Tomato sauce
Mushrooms
Red Pepper
Minced Garlic
2 Tomatoes
Ground Pepper
Salt
Ground Turkey
2 eggs
Bread crumbs/corn flake crumbs
Matza Meal
Make pasta (always salt pasta water).
Breaded Turkey Balls
In a bowl put ground turkey, salt, pepper, one egg and 2 tablespoons of Matza Meal. Mix. Then form them into balls. In a frying pan drizzle a little olive oil, brown the turkey balls. While its cooling off. Make the sauce.

Sauce
In pan brown some garlic, than add sliced mushrooms, sliced red pepper, and diced tomatoes, cook until tender. Add a can of tomato sauce to the pan, salt and pepper to taste. Mix with pasta.
Egg the turkey balls and coat with bread crumbs put it in a pan and bake for 15-20 minutes.

Steak Stir Fry

Ingredients
Minute steak/pepper steak
Snow peas
Carrots
Celery
Soy sauce
Brown sugar
Sesame Oil
Fresh Garlic
Sesame seeds
Onion Powder

Thinly slice minute steak  if you’re using pepper steak its usually sliced already. Put in a hot pan with olive oil and mince garlic when meat is just browned (1-2 minutes) set it aside. Cut the celery and carrots matchstick style. In a pan add some olive oil when pan is hot add all the vegetables. Let it cook for about 5 minutes. Then add the meat. Let it cook for another 5 minutes. While it’s cooking…in a small bowl add half cup of soy sauce, 4 tablespoons of brown sugar, 2 tablespoons of sesame oil, and a shake shake of onion powder. Add it into the pan and turn off. When you serve it you can sprinkle some sesame seeds for garnish.

Devils Food Cake

Devils Food Cake – 2 x 9-inch Cake.

Sugar 3 ½ Cups (26 oz)
Ap Flour 3 Cups (1 #)
Cocoa Powder 2 Cups (6.5 oz)
Baking Soda 1 Tablespoon
Baking Powder 1 teaspoon Mix dry together

Vegetable Oil – 2 Cups
Waker (hot) 2 2/3 Cups
Eggs 3 each Mix wet together

Moroccan Chicken

Garlic Powder
Onion Powder
Paprika
Salt
Turmeric
Cinnamon
Olive Oil
Pitted Olives
Raisins
onion

Take large bowl and mix approx. 1 tsp of each spice except the cinnamon and salt which just need a sprinkle. Add the 1/2 cup of olive oil and mix. It should turn into a paste. Cover the chicken in the paste. Then in a pan put a drizzle of olive oil. Lay the chicken skin down. Let it brown a little then turn it over and add 1/2 cup of olives. 1/2 cup of raisins a half onion sliced, you can add a splash of any semi dry wine. Cover and cook on low flame for about a half hour.

Option: fresh parsley.

PS. I tried the same recipe in the oven and it was delicious too!

Sesame Chicken

Ingredients to bread chicken

2 tablespoons flour
2 tablespoons cornstarch
2 tablespoons soy sauce
4 tablespoons water
1 tsp oil
1 tsp baking soda
1 tsp baking powder

Ingredients for sauce

2 tablespoons cornstarch
1 tablespoon ketchup
2 tablespoons soy sauce
2 tablespoons white vinegar
1/2 cup white sugar
1/2 cup brown sugar (you can eliminate sugar depends how sweet you want it)
1 cup of water
sesame seeds
1 tablespoon sesame oil

Breading the chicken

Take your chicken cutlets and cut them into cubes.
In a big bowl (to fit all the chicken) dry ingredients and then liquid. Mix it up real good add the chicken cubes make sure all the chicken got covered in the mixture. Put in the fridge.

Sauce

Take a little pot put 1 cup of water to boil. Then add all the other wet ingredients..after its all stirred add the cornstarch till it thickens. Take off flame.

Now for chicken in a pan put some vegetable oil and wait till hot and brown the chicken, once its browned on both sides…put it in the oven to bake for about 30 mins uncovered at 350.

When done…you can make sure the sauce is heated. Put chicken with sauce on top and and sesame seeds.

Make this with white rice, brown rice or any other that you prefer.
