Steven Raichlen’s veal chops on The Grillworks

Butternut Squash Corn Muffins:


From Kosherinthekitch

1 Cup corn meal
1 1/4 cup flour
1 1/2 cup sugar – or less
1 /2 TBS baking powder
1/2 Tsp salt
1 12 oz pkg. frozen winter squash
2 eggs
1 cup soy milk or coffee rich (i use soy milk and it tastes gr8)
3/4 cup oil
cinnamon

preheat oven to 350
grease muffin tins, or if you are using the cupcake papers, grease them lightly
combine top 5 ingredients
defrost squash according to package directions
combine squash, eggs, soy milk & oil in a bowl
add dry ingredients, mix very well
fill up tins 1/2 way or to your liking
sprinkle the tops with cinnamon
bake for 25 mins

salmon patties:

1 Salmon Gefilte Fish, slightly defrosted, cut into 1″ slices
1 egg, lightly beaten
1 tablespoon water
3/4 cup bread crumbs
1/3 cup packaged, finely ground walnuts
1/4 teaspoon dried tarragon
1/4 teaspoon dried parsley flakes
1/2 teaspoon thyme
1/2 teaspoon paprika
1/2 teaspoon basil
1/4 teaspoon coarse black pepper
lemon and lime, for garnish (optional)
bake with oil or pam for 10 min on 400 turn over bake addl 10 min spray pam or drizzle oil before baking more.
this was yummy on a hamburgur bum with condiments!

Sesame Chicken:

SERVES 3 -4 (change servings and units)
Ingredients

* 3 whole boneless chicken breasts

Marinade

* 2 tablespoons light soy sauce
* 1 tablespoon cooking wine or dry sherry
* 3 drops sesame oil
* 2 tablespoons flour
* 2 tablespoons cornstarch
* 2 tablespoons water
* 1/4 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1 teaspoon vegetable oil

Sauce

* 1/2 cup water
* 1 cup chicken broth
* 1/8-1/4 cup white vinegar or rice wine vinegar (depending on how sweet you want the sauce)- use 1/8
* 1/4 cup cornstarch
* 1 cup sugar (i recommend 1/2 cup to 3/4)
* 2 tablespoons dark soy sauce
* 2 tablespoons sesame oil
* 1 teaspoon chili paste (i substitute chili powder/red pepper and ginger mix)
* 1 garlic clove (minced)

Frying

* peanut oil (3 1/2-4 cups) (or any veggie oil)

Serving

* 2 tablespoons toasted sesame seeds

Directions

Cut the chicken into 1-inch cubes. Mix the marinade ingredients (the first 9 ingredients listed) and marinate the chicken for 20 minutes.

To prepare the sauce:.

Mix together all of the sauce ingredients (the LAST 9 ingredients beginning with water). Pour them into a small pot and bring to a boil, stirring continuously. Turn the heat down to low and keep warm while you are deep-frying the chicken.

To deep-fry the chicken:.

Add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels and then place chicken in warm oven (130 degrees) while you continue frying. Repeat with the remainder of the chicken. Just before you are finished deep-frying, bring the sauce back up to a boil.

Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds. Serve the Sesame Chicken with rice and steamed broccoli.

Gefilte Cocktail Fish Balls:


From kosherinthekitch

1 loaf DEFROSTED sweet gefilte fish
16 oz. can crushed tomatoes
1/8 teaspoon crushed red pepper
1/2 teaspoon garlic powder
3 Tablespons honey
1/2 teaspoon salt
1/2 teaspoon pepper

Bring everything but the fish to a boil
Turn down to simmer
make small ballies out of gefilte loaf (makes about 30 balls)
Simmer 35 minutes.
Serve cold with lemon wedges to squeeze over the top.

Imitation crab salad:
1 package imitation crab, defrosted
1/2 large cucumber, chopped small
1/2 red pepper, chopped small
some chives, chopped
some carrots, chopped
2-3 Tbsp mayo, light or regular
black pepper
garlic powder
onion powder
