Carrot salad, with apples, pineapples and raisins:

Ingredients:
20 large carrots, peeled and shredded
5 apples, peeled and shredded
1 can pineapple pieces, drained and shredded
1 can pineapple tidbits, drained
1 cup raisins
1/2 cup sugar
2 teaspoons cinnamon
juice of 1 lemon

PROCEDURE:
In a large bowl, combine the shredded carrots, apples and pineapples. Add the lemon juice immediately to prevent the apples from turning brown. Add the pineapple tidbits, raisins, sugar and cinnamon. Toss together and refrigerate for a few hours.
